картофель 2-3 шт.
стручковая фасоль 500 г
соус песто 2 ст.л.
соль, перец по вкусу
Рецепт сытного овощного салата с заправкой из соуса песто.
Фасоль помыть, отрезать кончики. Если очень длинная, порезать на 2-3 части. Отварить в подсоленной воде в течение 5-7 минут (чтобы фасоль оставалась немного хрустящей), слить, обдать холодной водой для сохранения цвета и отставить в сторону.
Картофель отварить в мундире, еще в горячем виде очистить, порезать кубиками, добавить к фасоли. Туда же добавить песто, все перемешать. Приправить по вкусу солью, перцем и, если не достаточно масла от песто, то влить еще не много оливкового масла. Оставить 10-15 минут для перемешивания аромата, сервировать тарелки. Можно использовать как гарнир к белой рыбе, например к отварной треске.
